The bell peppers were on sale at Jimbos today so I thought I'd try and make some fajitas for Trent tonight. It was a great after yoga surprise. They turned out really good.
Ingredients:
Firmest Tofu
Corn Tortillas
Avocado
Tomato
Green and Red Bell peppers
Yellow and red onion
Sliced Mushrooms
2 limes (one of them juiced)
Brown rice
Chopper garlic
Olive oil
Chili pepper powder
Cayenne pepper powder
I had the brown rice made earlier today so I didnt have to worry about it tonight. Slice the bell peppers, onions and mushrooms and toss them in a bowl. Drizzle some olive oil, sprinkle some chili powder and sqeeze some lime over it, stir and let it marinate for a bit.
Cut the tofu in to thin strips and pat dry with a paper towel. Then sprinkle with Salt, pepper, chili powder and lime.
While the tofu and vegis marinate, slice up some avocado, tomato and lime to put on the plate. I sprinkled chili powder and salt on the avo. Also get the rice ready, and heat the tortillas and cover them so they stay warm.
Chop 3 cloves of garlic put it in a large pan with olive oil on high heat. Let the oil start to sizzle a bit and then lay the tofu strips in the pan. Let them brown on each side, then take them out and throw the vegis in fast!
Squeeze lime juice over the vegis. They should sizzle really loud... this woke up my son who was sleeping in the other room. You can also add a little cayenne, depending on how hot you like it.
Then take it out when you feel its done and serve!
EDIT** I made this again for breakfast the other day... yes breakfast, when your a vegan you can eat whatever you want for breakfast... Black beans mixed with nutritional yeast MAKE this meal.
